Borgo’s Balsamic Vinegar of Modena PGI is the product of ancient craft techniques, the result of a carefully balanced mix of must from grapes grown in the region and a small percentage of wine vinegar. The mixture is allowed to age in oak casks, after which, the end product is assigned one of four different labels, depending on the Balsamic’s characteristics and culinary use. Yellow Label Balsamic Vinegar has a more rounded mouth taste with hints of woods and a persistent sweet aftertaste.

SUGGESTIONS

Yellow Label is best with meat, fish and vegetable dishes. Add it at the very end of cooking before you turn off the heat to get a delicious sweet-sour gravy.
Aging gives this Balsamic a full-bodied, rounded flavour, making it ideal for roasted and grilled meats.
