Our Borgo Secco (traditional wine vinegar)

The name “Il Secco” vinegar was traditionally used by peasant families to distinguish wine vinegar from Balsamic vinegar. Il Secco is made exclusively from white Trebbiano grapes. Prepared following the traditional natural process of acidification. Wine is sprayed into vats – today often made of steel – containing a bedding of wood chips. The acetic acid bacteria in the wood gradually turn the wine into vinegar. Our Il Secco del Borgo is then refined in oak casks for several years. The end result is a warm amber coloured wine vinegar with a deep pungent tang.
