Do you know Countries and Landscapes? Last Friday, the Striscia la Notizia column, which recounts the most beautiful places in Italy, was completely dedicated to The Borgo of Balsamic.
As he says Davide Rampello, the host of the programme, “Early 20th century guidebooks called these hills the most beautiful in Italy. Vast meadows and woods, vineyards and olive groves. Castles and Benedictine parish churches, villas and historic residences spring up in the scrub. One of these is a paradise of harmony”.
We are of course talking about Il Borgo del Balsamico, a noble house where, in an attic, “time has stood still”.”.
The beautiful video by Paesi e Paesaggi tells the story of our acetaia, of Silvia and Cristina who followed their father's passion for balsamic vinegar. “The family vinegar cellar was a monument of material culture - continues Rampello - they have made it a craft enterprise of excellence“.
Paesi e Paesaggi tells the story of how Traditional Balsamic Vinegar of Reggio Emilia PDO is produced and of the “batteries”, a series of five or six small barrels, ranging from 10 to 2 litres, in which the black nectar rests and ages.
It also tells of the different woods, the “rincalzo” method, the unique flavour of Traditional Balsamic Vinegar of Reggio Emilia PDO and the colour code that distinguishes our aged Balsamic Vinegar of Modena PGI.
