Balsamic Vinegar of Modena Borgo PGI is a completely artisanal product that is the result of skilful ageing of a mixture of the region's grape must and a small percentage of wine vinegar. Ageing takes place in oak barrels and is available in the four labels, for the four different uses in the kitchen. The aged Balsamic vinegar of Modena IGP has been resting for a period of more than three years, but the regulations do not allow a precise ageing to be declared.
The yellow label is already a rounder product, with hints of wood and a more persistent sweetness. The sweetness is already perceived on the nose along with a less marked acidity.
