Balsamic Vinegar of Modena Borgo PGI is a completely artisanal product that is the result of skilful ageing of a mixture of the region's grape must and a small percentage of wine vinegar. Ageing takes place in oak barrels and is available in the four labels, for the four different uses in the kitchen. The adjective 'aged' authorised by the Consortium of Balsamic Vinegar of Modena certifies that it has been aged for more than three years.
It is forbidden by law to indicate ageing with numbers or adjectives as a reserve.
Only products certified by the consortium through a three-year inspection can have the designation 'aged'.
The barrels are sealed after filling and are only desealed after three years.
