A unique experience

Close your eyes and let the scent guide you: this is how the guided tour of Balsamico's Acetaia, a place where the words Tradition, Taste and Excellence are at home.

The guided tour starts right here, from the vinegar cellar and its hundred-year-old barrels, about one hundred and fifty in number, where the Traditional Balsamic Vinegar of Reggio Emilia PDO ages, or as they say in the jargon, matures for a long time.

The vinegar cellar of The Borgo del Balsamico houses very old casks from the 18th and 19th centuries from noble families in the provinces of Modena and Reggio Emilia. During the guided tour you will discover that each barrel is different: acacia, oak, chestnut juniper, cherry, ash. mulberry are the seven types of wood in which Traditional Balsamic Vinegar rests. Each wood gives the product a particular colour, flavour and aroma, which can be found in the final tasting.

The barrels are divided into batteries, i.e. a sequence of seven barrels (but can also be five or six) ranging from the smallest to the largest. Every year, a small part of the balsamic is topped up from cask to cask, according to the ancient Solera method. The tasting proceeds in stages, for accustoming the palate to different flavours that balsamic vinegar can tell.

With a teaspoon (never metal), in purity we will let you taste different types of daily products (Balsamic Vinegar of Modena PGI or condiments) and finally an ageing of Traditional Balsamic Vinegar of Reggio Emilia PDO.

It is difficult to describe it in words: from the youngest and sourest product to the king of all balsamics: the traditional has a unique consistency, a very special viscosity and a complex taste.

You can smell notes of vanilla, dried fruit, tamarind, plum and cherry, and all the woods in which the balsamic has rested for more than twenty-five years and more.

Your palate will be delighted by this unique and precious experience of the senses and the word Balsamic will never have the same meaning for you again.

The Balsamic Borgo is happy to organise guided tours of the Ancient Acetaia with tasting of its PDO, PGI balsamic products and condiments.

Visits will take place by appointment only. We will be happy to make your stay in Emilia unforgettable.
