A journey through taste and tradition: the 10th anniversary of Balsamic Borgo

On the occasion of the 10th anniversary of the Balsamic Borgothe sisters Cristina and Silvia Crotti opened the doors of their historic vinegar factory, where the’Traditional Balsamic Vinegar of Reggio Emilia PDO is aged in barrels over 700 years old. A special occasion, celebrated with a unique challenge: to create a complete menu, from starter to dessert, using balsamic vinegar in every course.

Three talented chefs took up this challenge, Marta Scalabrini, Ivan Giglio and Giorgio Falzarano, of the restaurant Marta in the Kitchen of Reggio Emilia. Their aim? To enhance this extraordinary product without altering its essence, creating dishes with a perfect balance of acidity and sweetness.

The event was not only a tribute to tradition, but also an opportunity to reflect on the knowledge of balsamic vinegar, often subject to misunderstandings outside its production areas.
