Borgo’s Balsamic Vinegar of Modena PGI is the product of ancient craft techniques, the result of a carefully balanced mix of must from grapes grown in the region and a small percentage of wine vinegar. The mixture is allowed to age in oak casks, after which, the end product is assigned one of four different labels, depending on the Balsamic’s characteristics and culinary use.
