Saba is a condiment that is obtained by cooking, over direct heat and at a low temperature (around 60°C), the fresh must of Trebbiano grapes for several hours, until a dense, amber-coloured, dark and shiny product is obtained.
It is a traditional product of the Emilian countryside and tradition has it that children in the past used it as a syrup in the snow and families as a poor man's dish in polenta.
