Spaghetti di Semola di Grano duro from Pastificio Agricolo Mancini

The spaghetti are made from durum wheat grown directly on the farm.

The only ingredients used are semolina and water. We use bronze circular dies and dry the pasta at temperatures below 44°C, taking about 20 hours for short pasta and about 40 hours for long pasta. The spaghetti have a diameter of 2.2 mm and a length of 260 mm. Cooking time is 9-11 minutes.
Organoleptic characteristics

AROMA: typical, but uncommon with a prevalence of the semolina note;
TASTE: pleasant, typical but uncommon with a prevalence of the semolina note;
COLOUR: soft yellow
CONSISTENCY: typical; pronounced 'ribbed' feeling of the dough, good cooking firmness
